Avocado Chocolate Pudding

2 tbsp coconut oil
1/3 cup maple syrup
1 tsp vanilla
¾ cup almond milk
2 ripe avocados
½ cup pure cocoa powder
Soak dates in warm water to soften for 15 min.
In food processor, combine dates, coconut oil, syrup and vanilla.
Add half of the almond milk and avocados. Pulse until smooth.
Add cocoa powder and rest of almond milk. Pulse until smooth and pudding consistency.
Transfer to individual bowls or containers, then refrigerate for at least an hour.
